The basic and biggest difference between BurNarj Cero non-alcoholic orange wine and orange juice is in the production process.
This vegan and diet-friendly, sparkling, non-alcoholic orange wine is made in Spain and is made from 100% fresh oranges.
A first step in the production of BurNarj Cero is the selection of orange varieties, which initially determines the desired flavor profile of BurNarj Cero wines in terms of acidity, sweetness and taste.
Oranges are hand-picked from the trees and delivered to the factory, where they are soaked, washed and pressed to obtain a juice that is filtered.
Then, the orange juice intended for wine undergoes a fermentation process in our steel tanks, where the natural orange sugar and a very small amount of added sugar in the juice is converted into alcohol and then becomes wine with an alcohol content of about 9% ABV.
The next step in the production of non-alcoholic BurNarj Cero is the removal of alcohol from the wine produced, which has two main objectives: first, the elimination of the alcohol content of the wine, and secondly, the production of a new non-alcoholic orange wine.
Our winemakers, whom we call artists because making a non-alcoholic sparkling orange wine requires a whole new level of science and art, wanted to create a truly non-alcoholic BurNarj sparkling orange wine with all the benefits of low calorie content, low sugar content and a large amount of vitamin C, but without the negative effects of alcohol content, while retaining all the aromas, colors and flavors.
Extracting the alcohol from the fermented juice is a major challenge.
It may sound simple, but it is not easy to make non-alcoholic wine from alcoholic wine, because there is no alcohol to mask the taste, and since we want to offer a refined, tasty non-alcoholic orange wine, we must ensure that no taste, balance or quality is lost during this long production process.
For this we let our winemakers bring their magic and know-how before applying a special technique and innovative technological processes that guarantee that the aromatic fractions are recovered and therefore not lost.
The innovative basic treatment consists of a rapid distillation of the orange base wine at very low temperatures of 15/16°C, in a single pass and with fully automatic operation. The dealcoholization of the wine allows to obtain a residual alcohol content of less than 0.1%, reaching 0.05% residual alcohol and even less.
The absolute best result is obtained by intervening in the wine at the end of fermentation, in the same fermentation tank, so that the wine immediately finds a perfect balance and is no longer disturbed. In this way the wine always remains balanced, fresh and aromatic. Then the “dealcoholized wine” is slightly carbonated by injecting carbon dioxide.
Orange juice, on the other hand, is simply the unfermented juice of oranges.
Although both are derived from oranges, they differ significantly in flavor profile, largely due to how they are processed.
